This image shows mouse lung tissue; the normal cells near the bottom, sampled from a healthy mouse, contrast with the cancerous cells at the top, sampled from a mouse whose diet included oil previously heated to deep-frying temperatures. Research efforts like this one help to clarify the hidden health risks and benefits of different foods.
